Here is a yummy easy dinner that is perfect for a week day meal or a busy weekend! Taco Salad made with taco seasoned lean ground beef (or turkey) placed on a bed of lettuce and chopped tomatoes. Then topped with Quest protein chips and drizzled Bolthouse Cilantro Avocado dressing on top! You can use any flavor of Quest protein chips, but I prefer Loaded Taco flavor!
Ingredients
4 ounces 95-95% uncooked lean ground beef or turkey - 3 ounces cooked
1/2 tsp taco seasoning
1/2 cup chopped tomatoes
2 cups romaine lettuce, shredded
1 bag of Quest Protein Chips
2 tbsp Bolthouse Cilantro Avacado Dressing
1.5 ounces avocado, sliced/mashed or 2 tbsp sour cream
Directions
Brown grown beef or turkey in a medium sized skillet. Drain meat and return to skillet.
Stir in taco seasoning and heat for approximately 2 minutes. Set aside to cool slightly.
Add lettuce and tomatoes to a bowl. Add meat.
Top salad with Quest protein chips, drizzle with dressing and finish off with avocado or sour cream.
Makes 1 serving. Other options for toppings include 2 tbsp plain non-fat or low fat Greek yogurt or 2 tbsp salsa. Choose one topping (don't add them all).
