Crockpot BBQ Root Beer Pulled Chicken

I love using my crockpot in the cold winter months to cook up a tasty, healthy, easy meal the whole family will love!


Makes 4 Servings


Ingredients:

2 lbs chicken breasts

12 oz diet/no sugar root beer

3/4 cup G Hughes Hickory BBQ Sauce or 1 1/2 cups G Hughes Carolina Sweet Heat BBQ Sauce, (or any sugar free BBQ sauce) divided


Directions: 

  1. Place chicken at the bottom of a slow cooker.

  2. Whisk together root beer and 1/2 cup BBQ sauce in a bowl.

  3. Pour BBQ mixture over chicken and toss to coat.

  4. Cook on Low 6 hours or on High 3 hours. During the last 20 min of cooking, drain some of the liquid. (I like to keep some of the liquid to make it more saucy.)Then shred the chicken with two forks.

  5. Add remaining BBQ sauce to the chicken, stirring until combined.


To keep it lean and healthy, serve on Cauliflower Thins (I like Trader Joe's) or any Cali'flour Foods Flat Breads!
